You are the new food and beverage director of a 225-room full-service property with a restaurant and lobby bar. On your first day, the controller asked to meet with you because he discovered that a bartender from the lobby bar had a short cash drawer at the close of his shift on Friday, and again on the following Thursday. When asked, the employee stated that he did not collect from a couple of customers who left without paying. The controller knows from previous month’s income statements that Thursday through Saturday are busy times in the bar and that the sales normally total $2,000 plus per night. The bartender reports to you.
